I bought some beautiful organic cinnamon and ever since have been looking for ways to use it. So good for you!
I tried a few cinnamon cookie recipes and then started taking bits and pieces that I liked and made it my own with some additions. This is my final recipe. I usually double it and after the cookies are cool I keep them in the freezer.
Cinnamon Cookies
These are not overly sweet and great with coffee or tea.
A good quality cinnamon makes all the difference, add extra!
Ingredients
1/2 cup sugar
1/2 cup brown sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 and 1/2 cup flour
1 tablespoon Cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
Cream together sugars and butter.
1/2 cup sugar
1/2 cup brown sugar
Beat in egg, vanilla and cinnamon extract
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
Combine Flour, Cinnamon, baking powder and salt
1 and 1/2 cup flour
1 tablespoon Cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
Add to wet mixture.
Blend well.
Transfer to small bowl or bag – chill 30 minutes to an hour or more
Preheat oven to 350F
Create 1 inch cookie balls
Bake for approximately 10 minutes on parchment lined cookie sheet or until edges are starting to brown
NOTES:
I used my Stand Mixer, best investment ever, and the spatula paddle
Switched to Whisk attachment after adding Wet and Dry together
For extra sweetness and fanciness sprinkle cookies with cinnamon sugar before baking
